In order to provide the freshest and tastiest coffee to our customers, we freshly roast our coffee onsite each day using patented state of the art, small batch urban friendly roasting technology. Our patented Roastaire™ is a hybrid of the fluidized bed & aromatic coffee roasters currently available in the market today. It's closed to the atmosphere over 85% of the time and is 80% more energy efficient than a comparable drum roaster, making it Canada's leading clean air roaster. The Roastaire™ heat source is electric, ensuring that no hydrocarbons are produced by the roaster at the source of roasting. Most traditional coffee roasters use natural gas which typically consume approximately '3 times the energy' to manage the emissions produced from roasting the coffee itself. The Roastaire™ is the combination of the 2 proven styles of coffee roasting, the fluidized bed (hot air) which provides the even heat source and the aromatic (closed system) component, which allows some of the natural flavours generated during the roasting process to remain with the bean. The advanced 'green technology' of the Roastaire™ allows immense flexibility in terms of application, with high density downtown commercial spaces being just one example. In addition to our state of the art roasting method, we roast only 'strictly hard bean' (SHB), certified organic Arabica varieties come from the best coffee regions around the world, comprised mostly of shade-grown crops which means the flavours and body are left to develop slowly out of the direct sun. Roasting enhances the characteristics of the different beans and brewing unlocks them. We ensure the freshly roasted beans are available within 24 hours after roasting in order to provide you with the opportunity to enjoy coffee at its peak of personality. The Art of Roasting
The roasting process distinguishes subtle nuances between the different bean types and enhances characteristics such as aroma, body,
sweetness, acidity and brightness. Finding the right roast level for each bean to balance these qualities is the "art of roasting". We use hot air as our method of roasting and the Roastaire™ suspends the beans in jacket of hot air to ensure even batch roasting. This technique minimizes the chance of the beans becoming burned as a result of prolonged contact with a hot surface. Fresh Cup coffee will never taste burnt with our state of the art technology and will be roasted consistently, batch after batch.
Blending
Some coffee beans have certain distinct properties, that when combined with other beans, wonderfully mysterious things can happen.
Also referred to as 'Artesian Blending', simply said this means the combination of beans from different countries. Great coffee
blends are difficult to create as if they are not properly portioned, the best properties of each bean may in fact get cancelled by
the other beans. It is said that.'A great blend is one that yields more than the sum of its parts.'
